Cherry and chocolate are a perfect pairing, and this creamy and delicious dessert show them to their best advantage.   Double Chocolate Cheesecake w/ Fresh Cherry Sauce   Ingredients For the Crust: 2 cups crushed oreos 4 tbsp melted butter Pinch of salt   For the Cheesecake: 1 1/2 cups (255g) semisweet chocolate chips 1/2 cup (120g) heavy cream 24oz cream cheese (room temperature) 1/2 cup (113g) mascarpone cheese 1 cup (200g) granulated sugar (add additional 1/4 cup for sweeter cheesecake) 1/4 tsp salt 1/2 cup (120g) sour cream 1 tsp vanilla extract 4 eggs 1 1/2 tbsp cocoa powder 2 tbsp all-purpose flour   For the Ganache: 3/4 cup semisweet chocolate chips 1/3 cup heavy cream   For the Cherry Sauce: 3 cups whole fresh cherries, pitted 1/2 cup water 1 tbsp corn starch 3-4 tbsp granulated sugar (to your taste) 1 tbsp lemon juice   Instructions: Prepare the crust. In a medium bowl, add crushed oreos, melted butter
