This is a Pizza Bianca, white pizza, where the acidity of tomato sauce is substituted by that of apricot compote 👌🏻

To make the compote, sauté 5/6 apricots in butter for 10 minutes with a pinch of salt and, if you like, with a teaspoon of sugar. Blitz them with a blender a sieve it to make it smoother and silkier 😀
